My friend, Rachel, from http://www.rachelcooks.com is having a baby and my other two friends, Brandy & Brandi (I know, right) decided to host a virtual baby shower.
When I think of foods that Rachel likes popcorn obviously comes to mind, but that’s quickly followed by anything vanilla bean or pumpkin. So, I made these.
My husband and I recently committed to doing the 45 day Paleo challenge so I had to make something grain free for this party. Though, these are technically Primal because there is cream cheese in the frosting.
This is one of those recipes that came out so good I’m shocked that it’s diet food. If you have anyone coming to your house for Thanksgiving that eats Gluten Free, I’d definitely make these-though check on the walnuts & raisins. I’m not so sure about those.
- For the Cookies:
- 1¾ cups almond flour
- 4 tbsp coconut flour
- 1 tsp baking powder
- 1½ tsp baking soda
- 3 tsp pumpkin pie spice
- ½ tsp kosher salt
- ¼ cup stevia
- ½ cup coconut oil
- ¾ cup pure pumpkin puree
- 2 eggs
- 1 tsp vanilla extract
- For the Filling:
- 4 tbsp unsalted butter, room temperature
- 8 oz cream cheese, room temperature
- 2 tbsp stevia
- ½ tsp vanilla extract
- ½ cup chopped walnuts (optional)
- ½ cup raisins (optional)
- For the Cookies:
- Preheat oven to 350°
- In a large bowl sift together all dry ingredients.
- Add wet ingredients one by one, in order listed.
- Using a tablespoon, spoon spoonfuls of mixture onto greased baking sheet or silpat. Leave at least two inches in between each cookie.
- Cook for 8-9 minutes, or until edges just begin to brown.
- Cool for at least 20 minutes
- For the Filling:
- Using a mixer, mix together butter and cream cheese.
- Fold in stevia and vanilla.
- , Fold in raisins and walnuts if you’re using them.
- When cookies are cool spread your desireable amount of filling onto a cookie. I used about 1.5 tbsp per whoopie pie.
- Add another cookie to the top to create a “sandwich”.
